This healthy cranberry bread recipe is bursting with fresh cranberries, citrus flavors, and a hint of ginger spice! A delicious cranberry orange bread recipe perfect for the holiday season!

What You'll Need for Cranberry Bread:

Ingredients:

  • All-purpose or whole white flour
  • Whole wheat flour
  • Ground Flaxseed
  • Baking soda
  • Salt
  • Ground ginger
  • Butter
  • Maple Syrup
  • Oranges
  • Vanilla Extract
  • Eggs
  • Fresh or Dried Cranberries
  • Walnuts

How to Make This Cranberry Orange Bread Recipe:

This cranberry bread recipe uses two mixing bowls, one for the dry ingredients and the other for the wet ingredients.

First, combine all of the dry ingredients in a medium-sized mixing bowl and set aside.

In a large mixing bowl, combine all of the wet ingredients. Then transfer the dry ingredients and mix. Fold in the cranberries and walnuts into the batter.

Pour the batter into a loaf pan and bake for 50 minutes or until the center is fully cooked.

How to Store it:

This quick bread is perfect for those leftover bags of fresh cranberries after the Thanksgiving season. Forget food waste, this bread can be frozen, wrapped in foil, and stored in a freezer-safe plastic bag for up to three months.

Want to keep it from getting stale during the week? Keep it covered in the refrigerator for up to one week.

Variations:

For a gluten-free version, use the same amount of gluten-free flour in place of the whole wheat and whole white flour combined (1 ½ cups).

For a vegan option, use an egg replacer in place of eggs and a dairy-free vegan butter or coconut oil in place of butter.

If you have a nut allergy, omit the walnuts or substitute them with pumpkin seeds or even chocolate chips. Please be cautious of the ingredients and verify that the packaging was not processed in a facility containing nuts for cross-contamination. If you are unsure of your food allergy, consult a health professional.

Don't have fresh cranberries? Dried cranberries are also tasty! Soak them in water for about 20 minutes to plump them up.

Ingredients

  • 1 cup whole white flour
  • ½ cup whole wheat flour
  • ¼ cup flaxseed meal
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ teaspoons ground ginger
  • ⅓ cup butter, unsalted
  • ½ cup maple syrup
  • 1 teaspoon orange zest (about one orange)
  • Juice of one orange (about ¼ cup, add ½ cup more orange juice if prefer softer bread)
  • 1 teaspoon pure vanilla extract
  • 2 eggs
  • 1 ½ cups whole cranberries (thawed if frozen)
  • ¼ cup raw walnuts, chopped

Instructions

  1. Preheat the oven to 350 degrees Farenheit. Set aside a greased or non-stick loaf pan (81/2 x 4 ½").
  2. Combine the dry ingredients (flour, baking soda, salt, and ground ginger) in a medium mixing bowl, set aside.
  3. Whisk together the wet ingredients ( butter, maple syrup, orange zest and juice, eggs, and vanilla extract) in a large mixing bowl, set aside.
  4. Transfer the dry ingredients to the larger bowl of wet ingredients and stir to combine. Do not overmix.
  5. Fold in the cranberries and walnuts. Pour the batter evenly into the pan.
  6. Bake for 50 to 60 minutes. Using a clean knife, check the middle for residue. If it remains clean the bread is done.

Notes

    The bread looks great. However, I'm vegan so do you think this would work with an egg replacement? also, do you think i could use chickpea flour instead of the white?

      Hi Jacquie,
      Great questions! You can use an egg replacement like flaxseed. The chickpea flour may work, however if you want gluten free I recommend the Bobs Red Mill 1:1 it is very similar to regular flour for its purpose!
