This healthy cranberry bread recipe is bursting with fresh cranberries, citrus flavors, and a hint of ginger spice! A delicious cranberry orange bread recipe perfect for the holiday season!

Ingredients

  • 1 cup whole white flour
  • 1/2 cup whole wheat flour
  • 1/4 cup flaxseed meal
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground ginger
  • 1/3 cup butter, unsalted
  • 1/2 cup maple syrup
  • 1 teaspoon orange zest (about one orange)
  • Juice of one orange (about 1/4 cup, add 1/2 cup more orange juice if prefer softer bread)
  • 1 teaspoon pure vanilla extract
  • 2 eggs
  • 1 1/2 cups whole cranberries (thawed if frozen)
  • 1/4 cup raw walnuts, chopped

Instructions

  1. Preheat the oven to 350 degrees Farenheit. Set aside a greased or non-stick loaf pan (81/2 x 4 1/2").
  2. Combine the dry ingredients (flour, baking soda, salt, and ground ginger) in a medium mixing bowl, set aside.
  3. Whisk together the wet ingredients ( butter, maple syrup, orange zest and juice, eggs, and vanilla extract) in a large mixing bowl, set aside.
  4. Transfer the dry ingredients to the larger bowl of wet ingredients and stir to combine. Do not overmix.
  5. Fold in the cranberries and walnuts. Pour the batter evenly into the pan.
  6. Bake for 50 to 60 minutes. Using a clean knife, check the middle for residue. If it remains clean the bread is done.

Notes

For a gluten-free version, use the same amount of gluten-free flour in place of the whole wheat and whole white flour combined (1 1/2 cups).

For a vegan option, use an egg replacer in place of eggs and a dairy-free vegan butter or coconut oil in place of butter.

If you have a nut allergy, omit the walnuts and double-check your ingredients, such as the flaxseed to verify ingredients were not processed in a nut-containing facility. Pumpkin seeds and chocolate chips are also a tasty substitute.
