What You'll Need for the Chickpea and Cucumber Salad:
Ingredients:
- Chickpeas (canned or dried)
- Shallots
- Cucumber
- Olives
- Cherry or Grape Tomatoes
- Feta Cheese
- Fresh Dill
- Garlic Cloves
- Fresh Lemon
- Extra Virgin Olive Oil
- Dijon Mustard
- Honey
- Salt

Sharp Knife
Whisk

How to Make Chickpea and Feta Salad:
This dish is super easy and quick! It only needs two bowls for mixing, and that's it!
First, whisk together all of the ingredients of the dressing. This dressing can be saved for other salads or even as a marinade. Use all of the dressing to fully coat the salad if desired; it is up to you!
Next, combine all of the remaining ingredients in a large mixing bowl. Then add in the dressing as much as desired. Done!
How to Store Chickpea and Feta Salad:
This recipe is best refrigerated in an airtight container for up to 4 days. I would not recommend freezing this salad dish as the water content in the fresh vegetables will be affected once frozen.

Variations:
This chickpea and cucumber salad can be made with different legumes or vegetables!
If you do not have chickpeas, try other white beans, such as cannellini or great northern white beans.
Other vegetables to try: bell peppers, radish, carrots, or celery
For a milder flavor than onions and garlic, try scallions and chives for a nice flavor!
If you are vegan, use maple syrup in place of the honey in this dressing and your favorite non-dairy cheese substitute. We are fans of Treeline Cheeses in our house!

Ingredients
3 cloves garlic, minced
Juice and zest of one lemon
¼ cup olive oil
1 tablespoon Dijon mustard
1 tablespoon honey
¼ teaspoon salt
2 cans chickpeas, rinsed and drained
2 shallots, peeled and finely chopped
1 large cucumber, finely chopped
½ cup olives, chopped
1 pint tomatoes, such as cherry or grape, chopped
¾ cup feta cheese crumbles
½ cup fresh dill, chopped
Instructions
In a small bowl, whisk together the garlic, lemon zest and juice, olive oil, mustard, honey, and salt to make the dressing. Set aside.
In a large mixing bowl, combine the remaining ingredients and mix evenly. Pour in the dressing (as much as desired) to fully coat the chickpea salad.
Serve with your favorite protein as a side dish or enjoy with some fresh bread as a light entree option!
