What You'll Need for this Fennel Citrus Salad:
Ingredients:
- Oranges (preferably blood orange or cara cara)
- Fennel bulbs
- Radicchio or other lettuce
- Scallions
- Almonds
- Garlic cloves
- Red Wine Vinegar
- Honey
- Olive oil
- Salt to taste

How to Make Orange and Fennel Salad:
This salad recipe is super simple and quick! Done in two parts, first by making the dressing and then combining the salad ingredients.
The salad can be mixed all together in a large mixing bowl, or can be divided evenly onto small plates (I recommend this if a household member is picky with their salads!). If mixing the salad in a large mixing bowl, you can lightly coat it with the citrus salad dressing in the bowl or reserve the dressing to drizzle on the salad plates individually. If you plan to have leftovers, I recommend drizzling the citrus salad dressing after plating, that way the salad leftovers aren't soggy!
How to Make the Citrus Salad Dressing:
In a small bowl, whisk together the garlic, vinegar, juice of an orange, honey, and olive oil. Salt to taste.
This can be served on the side with your salads or mixed with the salad ingredients in a large mixing bowl.
To make the recipe even simpler, I highly recommend a citrus squeezer for the most efficient way to juice an orange.
How to Store It:
Store the leftover salad in an airtight container lining the interior with some paper towels. This will absorb any excess moisture. Store the salad dressing separately. The salad dressing can be stored for up to 7 days in the refrigerator and the salad can be stored for up to 3 days.
Variations:
For this orange and fennel salad recipe, I highly recommend blood oranges if they are in season. The taste and color are purely amazing! Blood oranges and Cara Cara are both good choices and have hints of berry taste.
Fennel bulbs add a hint of licorice flavor and is hard to substitute in this recipe. Haven't tried fennel yet? Now is your chance!
In this fennel citrus salad, I used radicchio lettuce to add some bitterness to balance out the sweetness from the honey and citrus. Any lettuce variety or spinach would also be delicious.
For a vegan version, substitute maple syrup for the honey.
This salad is naturally gluten-free!
To make this nut-free, please omit the nuts; use caution if you have a nut allergy.

Ingredients

- 4 medium oranges, peeled and sliced of 3 oranges, 1 whole orange reserved

- ½ cup almonds, roasted, unsalted
Citrus Salad Dressing:

- Juice of reserved orange (about 3 tablespoons)
- 2 Garlic cloves, minced

- 1 Tablespoon Red Wine Vinegar

- 3 Tablespoons reserved orange juice

- 2 tablespoons honey
-
- 3 tablespoons olive oil

- Pinch of salt (about ¼ teaspoon)
Instructions
Whisk together the orange juice, garlic, vinegar, honey, olive oil, and salt in a small bowl. Set aside the dressing.
Combine the oranges, fennel, radicchio lettuce, scallions, and almonds in a large mixing bowl. Transfer to salad plates and drizzle with the citrus salad dressing, or toss the dressing in the mixing bowl before serving (see Notes). Add as much dressing as you desire to taste.
Notes
For the best way to juice the orange for the dressing, I highly recommend a citrus squeezer.
