This peach clafoutis recipe simply blends the batter in a blender and pours over the peaches spread out in a greased pie pan or cast iron skillet. The batter will rise and puff up during baking time then sink as it cools.
Using a blender for this recipe was inspired by the great Julia Child. Her berry clafoutis recipe seen in the NYT used a blender and thought I would give it a try. Let's say it made life simpler!
The trick with clafoutis is getting the consistency right. It is very easy to overcook this dessert, leading to a rubbery texture. I have done this before and always adjust the times based on the pan I am using. I recommend checking it after 20 minutes and adding time as needed.
Variations:
To make this peach clafoutis gluten-free: Substitute almond flour or a gluten-free flour blend such as 1 to 1 Baking Flour by Bob's Red Mill for the all-purpose and whole wheat flour.
No Peaches? No problem! I have made this as a cherry clafoutis, which is the most common. Berries are also a delicious option!
How to Store It:
Peach clafoutis, or any clafoutis version can be stored covered or in an airtight container in the refrigerator for about three to four days.
Clafoutis is best served warm, reheat leftover clafoutis either in the microwave for 10-second intervals or up to 10 minutes in the oven at 350 degrees Fahrenheit.

Ingredients
1-2 lbs yellow peaches (thawed if frozen), sliced ¼ "
3 large eggs
½ cup granulated sugar
¼ cup maple syrup
2 teaspoons vanilla extract
½ cup all-purpose flour
¼ cup whole wheat flour
Pinch of salt
¼ teaspoon ground cinnamon, optional

Instructions
Preheat oven to 375 degrees Fahrenheit. In a greased pie pan or a cast iron skillet, spread the peach slices to cover the bottom of the pan. Set aside.
In a blender, combine the eggs, sugar, maple syrup, milk, vanilla extract, flour, and salt. Pour batter over the peaches in the pan. Bake in the center oven rack for 30-35 minutes or until the center is just slightly done.
The center should be soft and delicate. Puffing of the batter will occur while baking and sink down once cooling. Baking can take up to 45 minutes or more depending on your oven and the size of the pan used. Test the center with a knife until it comes out clean.
Let cool for 10-20 minutes before serving. Top with powdered sugar and serve with your favorite ice cream or yogurt!
