This cucumber and feta salad doubles as a crisp cucumber and radish salad, tossed with fresh dill and tangy dressing—perfect for summer meals.

Ingredients:

  • Cucumbers, such as English or Persian
  • Red Radishes
  • Feta Cheese
  • Olive Oil
  • Lemon
  • Garlic Cloves
  • Dijon Mustard
  • Honey or Maple Syrup
  • Fresh Dill or Chives

  • Mixing bowl
  • Whisk
  • Mandoline Slicer (optional)
  • Garlic Press (optional)
  • Microplane or Cheese Grater

How To Make This Cucumber and Feta Salad Recipe:

This cucumber and radish salad is so simple, yet super delicious! Most of the preparation is slicing the cucumber and radishes. If you have a mandoline slicer, you can achieve super-thin slices, adding a beautiful texture and appearance to this salad!

The prepped veggies are set aside in a large mixing or salad serving bowl. In a small bowl, the dressing ingredients are whisked together and then stirred in with the vegetables and feta cheese.

Add as much dressing as desired to coat the salad ingredients. And that is it!

Cucumbers are a huge hydration booster, making them perfect for the summer heat! Add them to pasta dishes, sandwiches, and yummy grain bowls. Don't miss out on the nutrition benefits!

How to Store it:

Cucumber and radish salad can be stored in the refrigerator in an airtight container for 3 to 4 days. I would not recommend freezing, as the water content in the cucumbers can lead to a mushy texture.

Variations to This Cucumber and Dill Salad:

This recipe can be made vegan by substituting maple syrup for the honey in the dressing and using a dairy-free cheese for the feta cheese. You could also omit the feta cheese completely for a less creamy texture.

This cucumber and feta salad is gluten-free. Always check that the products used do not contain gluten or pose a risk of contamination (such as Dijon mustard and feta cheese, which may use binders).

Not a fan of radishes? Try it with carrots or colorful tomatoes, or some crunchy cabbage!

Ingredients

Scale

4 cucumbers, such as English or Persian, thinly sliced

1 bunch of radishes, leaves and stems removed*, thinly sliced

2 green onions, chopped

½ cup feta cheese crumbles

½ cup fresh dill or chives, chopped

3 tablespoons olive oil

1 tablespoon lemon juice

Zest of one lemon

1 tablespoon Dijon mustard

1 tablespoon honey or maple syrup

3 cloves garlic, minced or crushed

Salt and pepper to taste

Instructions

Place the cucumber, radishes, green onions, feta cheese, and fresh dill in a large mixing bowl or salad bowl for serving. Set aside.

Whisk together the olive oil, lemon juice, zest, honey, mustard, and garlic in a small mixing bowl—salt and pepper to taste.  Transfer the dressing to the cucumber and feta salad and mix to combine. Add as much dressing as desired. Top with additional fresh herbs, salt, and pepper to taste.

Notes

This cucumber and feta salad can be made vegan. Substitute maple syrup for the honey; use non-dairy or vegan feta crumbles for the feta cheese, or omit the cheese in this recipe.

This recipe is gluten-free.
