This cucumber and radish salad is so simple, yet super delicious! Most of the preparation is slicing the cucumber and radishes. If you have a mandoline slicer, you can achieve super-thin slices, adding a beautiful texture and appearance to this salad!
The prepped veggies are set aside in a large mixing or salad serving bowl. In a small bowl, the dressing ingredients are whisked together and then stirred in with the vegetables and feta cheese.
Add as much dressing as desired to coat the salad ingredients. And that is it!

1 bunch of radishes, leaves and stems removed*, thinly sliced
2 green onions, chopped
½ cup feta cheese crumbles
½ cup fresh dill or chives, chopped
3 tablespoons olive oil
1 tablespoon lemon juice
Zest of one lemon
1 tablespoon Dijon mustard
1 tablespoon honey or maple syrup
3 cloves garlic, minced or crushed
Salt and pepper to taste
Instructions
Place the cucumber, radishes, green onions, feta cheese, and fresh dill in a large mixing bowl or salad bowl for serving. Set aside.
Whisk together the olive oil, lemon juice, zest, honey, mustard, and garlic in a small mixing bowl—salt and pepper to taste. Transfer the dressing to the cucumber and feta salad and mix to combine. Add as much dressing as desired. Top with additional fresh herbs, salt, and pepper to taste.
Notes
