Peach Burrata Salad with Arugula

It is still peach season! Try a savory twist on this peach burrata salad with arugula and lemon honey dressing!

Eat more Fruits!

Are you getting your daily recommended fruit intake? It comes out to about 1 ½ to 2 cups daily and 2-3 cups for vegetables. Many of us are not! Are you the type that doesn't like eating fruits on their own and needs to add them to your favorite meals? Whether you eat it as is or as a delicious topping, you are still getting all the benefits! Grilled fruit? Yes! Cooking fruits brings out a whole new flavor!

Eating fruit regularly is linked to improved memory, increased concentration levels, and reduced stress. This may be due in part to the antioxidants found in many fruits that are high in vitamin C and many other phytonutrients! And speaking of fiber, It keeps your digestive system healthy and helps you to feel full which can help with weight management. In addition, vitamin C helps protect cells from damage, potassium, for healthy nerve function, and iron for red blood cell production.

Peach Burrata Salad Recipe

For this recipe, I used a stovetop grill pan, but an outdoor grill also works! Just heat on medium-high and flip over as it chars a little. Here is a similar Grill pan to try if you prefer cooking peaches on the stovetop. For the dressing, I used honey, fresh lemon juice, and fresh thyme. Simple ingredients, but not so simple in taste!

I don't want to say that the burrata cheese is the main feature, but it is hard to compete with its delicious taste and texture! With all the new hobbies during this pandemic, why not try cheesemaking? I am curious myself and need to get this book on cheesemaking!

Peach burrata salad with arugula and honey lemon dressing makes this the perfect salad appetizer or main entree!

Ingredients

Arugula Burrata Salad

  • 3-4 medium peaches, quartered and pit removed
  • 2 balls (8 ounces) fresh burrata
  • ½ cup raw pecans, unsalted
  • 8 cups of arugula or other leafy greens

Honey Lemon Dressing

  • ¼ cup extra virgin olive oil
  • Juice of a lemon
  • 2 cloves crushed garlic
  • 2 teaspoons pure honey
  • one sprig fresh thyme, stem removed (or 2 teaspoons dried thyme)
  • Salt and pepper to taste

Instructions

Heat a grill pan (or outdoor grill) on medium high.  Place quarted peaches flesh side down. Let grill for 3-5 minutes or until charring. Flip over and cook an additional few minutes until charring on both sides.

While the peaches are grilling, prepare the salad dressing. In a medium bowl, whisk together all of the ingredients  for the honey lemon dressing until fully combined. Set aside.

Plate some mixed greens and top with half a ball of burrata (or the whole serving if preferred). Place the peaches on the salad and top with the pecans. Drizzle the salad dressing (about ¼ cup per plate).

Notes

If you don't have burrata, try it with creamy mozzarella! Besides peaches, other stone fruits, like plums and nectarines would also be delicious! Or try berries!
