This air fryer gnocchi is a simple, one-pan meal loaded with roasted vegetables and pillowy gnocchi. Easy, flavorful, this gnocchi air fryer dish is ready in about 20 minutes using air-fried gnocchi and squash!

What You'll Need for Air-Fried Gnocchi:

Ingredients:

  • Gnocchi
  • Olive Oil
  • Shallots
  • Butternut Squash Cubes
  • Garlic Cloves
  • Rosemary Sprigs
  • Goat Cheese
  • Salt & pepper

  • Air Fryer
  • Chef's Knife
  • Cutting Board

How to Make It:

After prepping the ingredients for this gnocchi air fryer recipe, toss everything together in a mixing bowl until fully coated with olive oil. Transfer the ingredients to the air fryer basket. Air Fry at 400 degrees Fahrenheit for 10-15 minutes, until the squash and gnocchi are nice and crisp! Add a minute at a time if needed to achieve the crispiness. That's it! Prep, toss, and air fry!

How to Store It:

Refrigerate the gnocchi in an airtight container for 3 to 5 days. Freeze in an airtight container or freezer-safe storage bag for up to 3 months.

Variations:

This air fryer gnocchi recipe is so versatile! Swap out other veggies for the squash, and try other fresh or dried herbs for the seasoning.

For a gluten-free option, use gluten-free gnocchi that is certified gluten-free, and if vegan preferred, double-check the label for vegan. I personally like the Whole Foods version that is vegan.

Ingredients

Scale

1 lb package gnocchi

¼ cup extra virgin olive oil

2 shallots, peeled and thinly sliced

2 cups butternut squash cubed, ½ to 1"

4 cloves garlic, thinly sliced

3 fresh rosemary sprigs, chopped and stems removed

4 ounces goat cheese crumbles (or feta cheese)

Instructions

In a large mixing bowl, toss the gnocchi, olive oil, shallots, squash, garlic, and chopped rosemary.

Transfer the mixture to the air fryer basket and ensure it is spread evenly in a single layer (if it is too much, cook it in multiple batches). Set the air fryer to 400 degrees and cook. Cook for 10-15 minutes, rotating halfway through the cooking time. Add a minute at a time if needed to achieve a crispy texture.

Stir in the goat cheese, or sprinkle on each plate, divided evenly. Enjoy!

Notes

If you prefer a vegan option, substitute a vegan gnocchi, such as this one by Whole Foods!

For a gluten-free version, try gluten-free gnocchi!

Not a fan of goat cheese? Use feta, gorgonzola, or parmesan!
