Air Fryer Butternut Squash

Crispy on the outside and tender inside, this air fryer butternut squash recipe is quick, easy, and perfectly seasoned. Air fried butternut squash is ready in under 20 minutes!

What You'll Need:

Ingredients:

  • Butternut Squash
  • Unsalted Butter or Olive Oil
  • Nutmeg
  • Maple Syrup
  • Salt and Pepper

Equipment:

  • Air Fryer
  • Chef's Knife
  • Mixing bowl

How to Make it:

This air fryer squash is super simple and ready in three steps! Prepping is the first step; make sure to rinse the squash halves and remove the seeds.

The next step is mixing the coating/seasoning for the squash. Simply stir the butter, nutmeg, and maple syrup, and brush this tasty mixture onto the cut side of the squash halves.

Remove the seeds.
Make the coating for the squash halves.
Brush the coating on the halves (cut-side).

Lastly, the squash halves are air-fried to a nice browning, adding even more flavor to this air-fried butternut squash!

How to Store it:

The squash can last up to a week if stored in an airtight container in the refrigerator. Make sure to cool completely before storing. For freezing, air fryer squash can be in an airtight container or an individual freezer bag for several months to a year.

Variations:

This air fryer butternut squash recipe is gluten-free and can be made vegan by using olive oil instead of butter or using a vegan butter of your choice.

Other squash varieties can also be substituted! Acorn or spaghetti squash would be delicious! Just check on the squash during cooking time, as this can vary per squash variety. Acorn squash will take about 15 minutes for cooking time.

Do you prefer butternut squash cubes? I am not shy to say that I buy already prepped cubes at the grocery store (no shame in that!). Instead of brushing the halves, toss the cubes with the mixture in a larger mixing bowl and transfer to the air fryer in a single layer. Air fry at 400 degrees for 10-15 minutes or until browning.

Ingredients

Scale

1 butternut squash, halved and seeds removed**

2 tablespoons unsalted butter, or olive oil

1 teaspoon ground nutmeg

2 tablespoons maple syrup

Salt and pepper to taste

Instructions

Set aside the butternut squash halves with seeds removed.

In a small mixing bowl, mix the butter (or olive oil), nutmeg, and maple syrup. Brush the mixture onto the cut side of squash halves. Transfer the butternut squash halves, facing the cut side down, into the air fryer. Set the air fryer to 400 degrees (if you have the Instant Pot air fryer, set to air fry mode) and cook for 20 minutes. Turn over halfway through cooking time. Add a minute at a time if needed to achieve browning.

Brush with leftover mixture if desired. Serve each half for two for a bigger portion, or cut each in half to make 4 servings. Salt and pepper to taste.

Serve as a side dish to your favorite main entree!

Notes

*If you don't have an air fryer, you can roast the butternut squash halves on a baking sheet at 400 degrees Fahrenheit for up to one hour.

** For cubed squash, toss the cubes with the mixture in a larger mixing bowl and transfer to the air fryer in a single layer. Air fry at 400 degrees for 10-15 minutes or until browning.
