Minted Peas Salad

This minted peas recipe is fresh and full of flavor with sweet peas, mint, and a simple lemon dressing. An easy side dish ready in minutes!

What You'll Need for Minted Peas:

Ingredients:

  • 1 lb peas, thawed if frozen
  • 1 shallot, peeled, thinly sliced
  • 2 garlic cloves, minced or grated
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • ½ cup feta cheese crumbles
  • ¼ cup fresh mint leaves, chopped
  • Salt and pepper to taste

How to Make Mint Peas:

If using frozen peas, set aside to thaw completely. For fresh peas, blanch the peas by boiling in water for 2-3 minutes, then drain and transfer to an ice bath. Set aside in a medium bowl.

In a small bowl, whisk together the shallot, garlic, olive oil, and lemon juice. Set aside.

Transfer dressing to the bowl with the peas and mix to combine. Add the feta cheese and mint leaves and stir to combine—salt and pepper to taste.

Enjoy with your favorite protein or entree, such as a tasty pasta dish or baked salmon!

Variations:

These minted peas are gluten-free!

To make vegan or dairy-free, substitute non-dairy vegan cheese crumbles for the feta crumbles, or omit the cheese in the recipe.

Not a fan of peas? Try it with edamame, lima beans, or your favorite cooked vegetable, such as broccoli or asparagus!

How to Store Peas with Mint:

Store in an airtight container in the refrigerator for 3 to 5 days, or freeze for up to 6 months.
