Air Fryer Zucchini Fries

These crispy air fryer zucchini fries require no baking in the oven! This zucchini fries air fry recipe is paired with cheese and fresh herbs!

What You'll Need for These Air Fryer Zucchini Fries:

Ingredients:

  • Cooking Spray
  • Zucchini
  • Eggs
  • Panko Bread Crumbs
  • Garlic Powder (or fresh garlic cloves)
  • Dried or Fresh Thyme
  • Cheese, such as Parmesan, Asiago, or Romano
  • Fresh Parsley

Equipment:

  • Shallow bowls or pie dishes for coating
  • Cutting board
  • Sharp chef's knife
  • Air Fryer or Air fryer attachment

How to Make this Zucchini Fries Air Fryer Recipe:

Spray the fryer basket with cooking oil spray. Set aside your air fryer or attachment (see Notes 2).

In a shallow bowl, whisk together the eggs with one tablespoon of water to create an egg wash and set aside. In another bowl, combine the breadcrumbs, garlic powder, and thyme. Dip a zucchini strip into the egg wash until fully covered and then transfer to the breadcrumb mixture. Rotate the zucchini in the mixture to coat evenly then place on a cutting board. Repeat until all the zucchini strips are covered.

Transfer the zucchini to the air fryer or attachment, coating just the bottom of the dish. Set to 400 degrees on Air Fry mode and cook for 7-8 minutes or until browned and crispy. Add a minute at a time if needed.  Repeat with the remaining zucchini strips.

No air fryer? You can also bake these in the oven! If you prefer baking, bake the zucchini fries at 425 degrees Fahrenheit for 15-20 minutes or until browning occurs. Spray with oil before cooking to give it a nice golden color. Substituting baking for the air frying method is very easy!


Top these air fryer zucchini fries with shredded cheese and parsley. Dip in your favorite sauce or dressing! I am a sucker for the ranch dressing, but ketchup or an aioli is also delicious!

Variations:

Don't have summer fresh zucchini? No problem! Other squash varieties, such as butternut squash and yellow squash would be perfect! Or, try carrots and eggplant, for a delicious substitute!

How to Make Gluten-Free Zucchini Fries:

For a Gluten-Free option, use gluten-free panko crumbs, such as Rice Panko or other certified gluten-free versions. Regular breadcrumbs that are gluten-free can also work, however the panko makes them more crispy!

To make these Vegan: Use a plant-based egg replacer or vegan mayo to coat the zucchini. Substitute vegan cheese for the cheese in this recipe.

2-3 large zucchini squash, cut into 1" wide strips (3" length)

2-3 large eggs (see Notes 1)

1 cup panko breadcrumbs

1 teaspoon garlic powder

½ teaspoon dried thyme

½ cup shredded cheese, such as parmesan, Asiago, or Romano

¼ cup fresh parsley, chopped (optional)

Instructions

Spray the fryer basket with cooking oil spray. Set aside your air fryer or air fryer attachment (see Notes 2).

Top with shredded cheese and parsley. Dip in your favorite sauce or dressing!

Notes

  1. If you are using 3 large zucchinis, I recommend using 3 eggs for the egg wash.
  2.  If you do not have an air fryer, I used the air fryer attachment with my Instant Pot. If you prefer baking, bake the zucchini fries at 425 degrees Fahrenheit 10-20 minutes or until browning occurs. Spray with oil prior to cooking to give it a nice golden color.
