Roasted golden beets have a rich, earthy sweetness in this simple and delicious recipe. It's perfect as a side dish or salad topper. These yellow beets are healthy, vibrant, and flavorful!

What You'll Need:

Ingredients:

  • Yellow Beets
  • Olive oil
  • Garlic Cloves
  • Lemon
  • Goat cheese
  • Fresh Parsley or Chives
  • Walnuts
  • Salt & Pepper
  • Microgreens or lettuce greens, optional

Equipment:

  • Mixing Bowl
  • Baking sheet
  • Large spoon or spatula
  • Peeler (optional)
  • Chef's Knife

How to Cook the Golden Beets:

This roasted golden beets recipe is super easy and only takes a few steps!

Prep the beets and give them a good scrub before peeling. If preferred, you can leave the peel on. Chop the beets into 1-2" cubes.

Mix the beets with the olive oil, garlic, salt, and pepper in a mixing bowl.

Next, transfer the beet mixture to a parchment or foil-lined baking sheet and spread evenly.

Bake at 425 degrees Fahrenheit for at least 35 minutes or until fork-tender (the beets will be soft enough to pierce with a fork).

Once the golden beets are ready, set them on a platter or dish and sprinkle with the lemon juice, zest, goat cheese, fresh herbs, and greens. Serve as a tasty side or on top of a salad!

How to Store Yellow Beets:

Refrigerate cooked beets in an airtight container for up to 3 days. Freeze for several months in an airtight container or freezer-safe storage bag. Excess beets? Make them into a pesto!

Variations:

Out of golden beets? Use the gorgeous red or purple beets!

Not a fan of beets? Try delicious carrots, parsnips, or baby potatoes!

Make sure to cook long enough until fork-tender. Cooking times will vary based on the vegetable.

To make vegan: Substitute the goat cheese for dairy-free cheese crumbles.

This recipe is also naturally gluten-free!

Ingredients

Scale

4-5 yellow beets, stems removed, peeled and cut into 1" pieces

3 tablespoons olive oil

3 cloves garlic, minced or crushed

Salt and pepper to taste

Juice and zest of one lemon

4 ounces or ½ cup goat cheese, crumbled

¼ cup fresh parsley or chives, chopped

¼ cup walnuts, unsalted, roasted

Instructions

Preheat oven to 425 degrees Fahrenheit. Set aside a parchment-lined baking sheet.

Mix the beets, olive oil, garlic, lemon juice, and zest in a large mixing bowl. Salt and pepper to taste. Transfer to the baking sheet. Bake for 35 to 40 minutes or until tender (able to pierce with a fork). Sprinkle the goat cheese, parsley (or chives), and walnuts. Serve as a side dish or delicious salad topper!

Notes

This recipe is gluten-free! To make it vegan, use dairy-free cheese for the goat cheese or omit the cheese completely.

If you have a nut allergy, please use caution and substitute the walnuts for a food item you tolerate, i.e., if you tolerate pumpkin or hemp seeds, try them as an alternative.
