A roasted golden beets recipe with olive oil, herbs, and a caramelized finish. These yellow beets are a flavorful side dish or as a salad!
4-5 yellow beets, stems removed, peeled and cut into 1" pieces
3 tablespoons olive oil
3 cloves garlic, minced or crushed
Salt and pepper to taste
Juice and zest of one lemon
4 ounces or 1/2 cup goat cheese, crumbled
1/4 cup fresh parsley or chives, chopped
1/4 cup walnuts, unsalted, roasted
Preheat oven to 425 degrees Fahrenheit. Set aside a parchment-lined baking sheet.
Mix the beets, olive oil, garlic, lemon juice, and zest in a large mixing bowl. Salt and pepper to taste. Transfer to the baking sheet. Bake for 35 to 40 minutes or until tender (able to pierce with a fork). Sprinkle the goat cheese, parsley (or chives), and walnuts. Serve as a side dish or delicious salad topper!
This recipe is gluten-free! To make it vegan, use dairy-free cheese for the goat cheese or omit the cheese completely.
