Ingredients
2 tablespoons olive oil
1 to 2 lbs mushrooms such as King Oyster or Portabella, sliced ¼" pieces (see Notes 1)
2 cloves garlic, minced
2 to 3 tablespoons unsalted vegan butter (see Notes 2)
1 tablespoon fresh thyme leaves, chopped
1-2 tablespoons low sodium soy sauce, optional, (see Notes 3)
salt and pepper, optional
Instructions
Heat olive oil to medium-high in a large saute pan or cast iron skillet. Cook the mushrooms until softened and browning, about 3-5 minutes per side. Add the garlic, vegan butter, fresh herbs, and soy sauce. Let cook for a minute and spoon the liquid over the mushrooms to coat. Turn off the heat and salt and pepper to taste.
Add the mushrooms to your main entree, such as a pasta or salad, or serve with your favorite side dishes!
Notes
- To make this recipe vegetarian, use regular butter if desired. If you have a dairy allergy, use vegan butter in this recipe.
- To make this recipe gluten-gree, use Tamari for the the soy sauce.
