What You'll Need For Marry Me Butter Beans:

Ingredients:

  • White Beans (Canned), such as Cannellini or Butter Beans
  • Olive Oil
  • Garlic Cloves
  • Dried Oregano
  • Sundried Tomatoes
  • Fresh Thyme
  • Vegetable Broth (low sodium preferred)
  • Heavy Cream
  • Parmesan Cheese
  • Lemon Juice
  • Fresh Basil or Parsley

  • Dutch Oven or Large Skillet
  • Cutting Board
  • Chef's Knife

How to Make Marry Me Beans:

This recipe is super easy! The first step is sauteing the aromatics and then simmering them with the white beans and vegetables. broth. While the beans simmer, the flavors come alive. Lastly, stir in the heavy cream, cheese, and lemon juice and top with fresh herbs.

The beans are delicious with your favorite bread or grain. I paired mine with rice and a salad for the perfect dinner meal.

How to Store it:

Store these butter beans in an airtight container in the refrigerator for 3-4 days. Want to meal prep and store for a later time? Freeze them in an airtight container for up to three months in the freezer.

Variations:

This Marry Me Beans recipe is naturally gluten-free. Please make sure that the broth, parmesan cheese, and heavy cream are labeled gluten-free as some packaged foods can contain wheat or other gluten-containing ingredients.

To make this dish vegan, substitute dairy-free cream (such as coconut milk) for the heavy cream, and vegan cheese for the parmesan cheese (or omit the cheese).

If you don't have butter beans or cannellini beans, try Garbanzo or Great Northern.

Ingredients

Scale

1 Tablespoon Olive Oil

4 garlic cloves, sliced

½ teaspoon dried oregano

1 cup sundried tomatoes (about 3 oz package), sliced

3 fresh thyme sprigs

2 15-ounce cans of cannellini beans, or other white beans, low sodium preferred

1 cup vegetable broth, low-sodium

½ cup heavy cream

¼ cup parmesan cheese, shredded

Juice of a lemon

½ cup fresh basil or parsley, chopped, (optional)

Salt & pepper to taste.

Instructions

In a Dutch oven or large skillet, heat olive oil on medium-high heat. Saute the garlic, oregano, sun-dried tomatoes, and thyme, about 1-2 minutes. Add the beans and vegetable broth and bring to a simmer, let cook for about 10-15 minutes, the liquids will start to thicken.

Stir in the heavy cream, parmesan cheese, and lemon juice. Let simmer for an additional minute and then turn off the heat. Top with fresh basil or parsley. Salt and pepper to taste.

Serve with bread or on top of rice.

Notes

If you prefer a vegan version, substitute dairy-free cream for the heavy cream and vegan cheese for the parmesan cheese.

This Marry Me Beans dish is gluten-free, but make sure the broth used is certified gluten-free as some store-bought versions may use flour.
