What You'll Need for This French Onion Soup Pasta Recipe:

How To Make One Pot French Onion Pasta:
Hence the name, it is all made in one pot! Use a large pot, preferably a Dutch oven, to start carmelizing the onions. This part gives the dish flavor and we will cook for at least 10 minutes on medium to medium to low heat (depending on your burner) while stirring often. The longer the cooking time, the more flavor! The mushrooms, garlic, and thyme will also cook with the mushrooms for the later portion of the cooking time. Those brown bits forming in the pan will get deglazed by the tasty red wine and/or broth, so don't worry.
Once everything is browned and the red wine has evaporated, the hands-off cooking approach comes in. You will add the pasta, broth, and soy sauce (omit the soy sauce if using beef broth). The soy sauce adds some umami flavor instead of beef broth for this vegetarian version. Make sure enough liquid is covering the pasta, if not feel free to add some water. Let the pasta cook until the liquid has absorbed, about 10-12 minutes.



For this French onion soup recipe, the liquid to uncooked pasta ratio is important. I used the 5 cups of liquid to one pound of pasta (uncooked). If you want less pasta, use 4 cups of liquid for every 12 ounces of uncooked pasta. In my household, we love extra carbs to fuel my ultra-runner husband!
Once the one pot french onion pasta is done, add in the tasty cheese to melt and salt and pepper to taste. Serve with additional fresh thyme or some parsley. Pair it with your favorite protein and a side salad, or your favorite vegetables to make a nice and complete meal!

Variations:
If you prefer beef broth such as in the traditional french onion soup recipe, omit the soy sauce in this recipe.
For a vegan option, substitute dairy-free butter and vegan cheese for the butter and gruyere cheese used.
For a gluten-free option, use the gluten-free pasta desired, gluten-free certified tamari for the soy sauce, and double-check the labeling on all ingredients used.

How to Store it:
This French onion pasta recipe can easily be stored in an airtight container in the refrigerator for 3-4 days. Freeze for up to three months.

Ingredients
1 tablespoon olive oil
1 tablespoon unsalted butter
1 lb onions (about two large onions), sliced
1 lb fresh mushrooms, sliced
4 cloves garlic, minced
1 tablespoon fresh thyme leaves (or 2 teaspoons dried)
½ cup red wine
5 cups vegetable broth, low sodium
1 tablespoon soy sauce
1 lb short pasta, uncooked
½ cup to ¾ cup Gruyere cheese, shredded (I also use Gouda or parmesan)
Salt and pepper to taste.
Instructions
In a large Dutch oven or pot, heat olive oil and butter on medium heat. Saute the onions and let carmelize, for about 10 minutes or longer; turn down the heat to medium-low if your onions start browning too fast depending on your stovetop. Stir often to keep from burning. With 5 minutes remaining, add the mushrooms, garlic, and thyme, and continue to saute until the mushrooms are browned. Add the red wine and cook until evaporated.
Add the broth, pasta, and soy sauce. Make sure enough liquid is covering the pasta, add some water if needed. Bring the pasta to a simmer and cover. Cook until the liquid has absorbed and the noodles are softened, about 10-12 minutes. Turn off the heat and stir in the cheese. Top with additional fresh thyme if desired. Salt and pepper to taste.
