A mushroom meat recipe using sauteed mushrooms as a meat substitute is the perfect versatile addition to any meal!

Ingredients

Scale

2 tablespoons olive oil

1 to 2 lbs Lion's Mane mushrooms or King Oyster or Portabella, sliced into 1/4" pieces (see Notes 1)

2 cloves garlic, minced

2 to 3 tablespoons unsalted butter (see Notes 2)

1 tablespoon fresh thyme leaves, chopped

1-2 tablespoons low-sodium soy sauce, optional (see Notes 3)

salt and pepper to taste

Instructions

Heat olive oil to medium-high in a large saute pan or cast iron skillet. Cook the mushrooms until softened and browning, about 3-5 minutes per side. Add the garlic, vegan butter, fresh herbs, and soy sauce. Let cook for a minute and spoon the liquid over the mushrooms to coat.  Turn off the heat and salt and pepper to taste. 

Add the mushrooms to your main entree, such as a pasta or salad, or serve with your favorite side dishes!

Notes

  1. To make this recipe vegan, use vegan butter or olive oil if desired. 
  2. For a gluten-free version, use tamari instead of soy sauce.
