I have come back to the blogging world (finally!) after taking time off during maternity leave, and what is a better way than to do a post on one of my favorite mealtimes, brunch? I am sure for the majority of you, weekends are also your favorite. Sleeping in, relaxing, and sharing a delicious meal in the late morning or afternoon with those you love is the best! Being a new mom, I must say that I miss my sleep, but I have also finally experienced the magic of motherhood thanks to my baby boy.
Brunch is such a wonderful way to have family and friends over while also having less stress in the kitchen. Most brunch recipes are pretty simple, and yes, extremely delicious! My stepmother, an amazing home chef, hosts the most fantastic out-of-this-world brunches, and she inspired me to do this fun and tasty recipe!
Berry season is here!
What better time to serve fresh berries in this blackberry french toast casserole than in the summer? Blackberries, and all berries, are bursting with flavor and juiciness this season! Delicious even on their own, berries can make excellent toppings to your favorite cereals, salads, and yogurt. Berry season also calls for pies and homemade jams. Keep an eye out for a future recipe in the works for my strawberry basil chia jam, a healthier version of the sweet stuff!
Besides the taste, berries are also amazingly good for you. Loaded with vitamin C, folate, and potassium, these tiny fruits are also good sources of fiber and antioxidants providing many health benefits. To get more in your daily eating routine, aim for at least two servings per day.

This recipe is excellent for those who are not morning people. By prepping this dish the night before, you can enjoy sipping a cup of coffee with your favorite company while it bakes! If you prefer a make-ahead breakfast meal for the week, this dish is also excellent for meal prepping!

Ingredients
1 12 ounce loaf of french bread, cubed or torn into 1 " pieces (brioche would also work great)
4 large eggs, whole
2 egg whites
2 cups low fat milk, can be cow's milk or dairy alternative of your choice
¼ cup pure maple syrup
¾ to 1 teaspoon cinnamon, ground
1 teaspoon pure vanilla extract
12 ounces blackberries, thawed if frozen
Instructions
Set aside a greased 9 x 13" pan.
In a medium bowl, whisk together eggs, milk, maple syrup, cinnamon, and vanilla extract; set aside.
Place bread pieces evenly in the pan. Pour egg mixture over bread pieces ensuring they are fully saturated.
Sprinkle in the berries across the bread and egg mixture.
Cover and soak overnight (or at least a few hours) in the refrigerator.
Bake at 350 degrees Fahrenheit for 45 minutes (for a softer texture) to one hour or more for a firmer consistency.
Drizzle with maple syrup or top with fruit!
Notes
This recipe can easily be made with other berries for a tasty alternative to blackberries. If you prefer other milk sources than cow's milk, non-dairy alternatives such as soy, coconut, or almond would also work great!
