Brownies with Strawberry Topping

These brownies with strawberry topping use fresh or frozen strawberries adding an extra flavor boost! These brownies are gluten-free, and can be easily made dairy-free! In this post, we will also discuss strawberry season and how to pick strawberries!

For a cakier brownie, use three eggs like I did here.

In this version I made these brownies with raspberries!

What You'll Need:

  • unsalted butter or oil, such as vegetable or coconut
  • cocoa powder
  • granulated sugar
  • almond flour (or all-purpose flour if not gluten-sensitive)
  • large eggs
  • vanilla extract
  • salt
  • chocolate chips
  • fresh or frozen strawberries (I also made these with raspberries)

Equipment:

  • Medium and large mixing bowls
  • 8x8 or 9 x 13 baking pan
  • Oven for baking

Using raspberries instead of strawberries is just as tasty!

How to Make it:

These brownies with strawberry topping are made by mixing the dry and wet ingredients separately and then transferring the dry mixture to the wet mixture bowl. Once the brownie batter is fully mixed, you'll want to stir in the chocolate chips.

The batter is then poured into the brownie pan and topped with sliced strawberries. Set to bake for about 30 minutes (testing with a toothpick or knife inserted in the middle). It is important to let the brownies cool for at least 15 minutes (if not they will fall right apart in your hands!).

If needed, the brownies can cool further to set. I sometimes have mine in the refrigerator to cool as my version always comes out fudgier; I prefer less cakey brownies.

Variations:

Do you prefer using less butter in your brownies? Try my Avocado Brownies using no butter and substituting it for perfectly ripened avocados!

Are you gluten-sensitive? Almond flour is gluten-free, yet, there are lots of other gluten-free flours if you don't like almond flour. I am a huge fan of Bob's Red Mill 1:1.

If you prefer a vegan version, try the flax eggs instead of the large eggs listed. Substitute the butter for your preferred vegan butter version.

Not a fan of strawberries? Try some tasty raspberries (see in my photos), blackberries, or even cherries! If using frozen strawberries, thaw them before adding.

Other fun toppings: chopped nuts, marshmallows, and pretzels!

Strawberry Season

Strawberry season varies depending on your region but typically is late spring to summer. In warmer climates, the season can even begin as early as January! Enjoying strawberries during their growing season will of course give you the tastiest berry!

Picking Strawberries

When picking strawberries, look for berries that are vibrant from top to bottom. Avoid any white tips if you can. Berries should be fragrant and free of bruising. When picking, twist and pull gently from the strawberry, this will avoid damaging the beautiful plant!

Ingredients

Scale

½ cup melted butter, unsalted

1 cup granulated sugar

2 large eggs*

1 ½ teaspoons pure vanilla extract

¼ cup cocoa powder, unsweetened

½ cup almond flour

½ teaspoon salt

½ cup semi-sweet chocolate chips

½ cup fresh strawberries, thawed if frozen, sliced

Instructions

Preheat oven to 350 degrees Fahrenheit. Set aside a greased 8 x 8 baking pan.

In a large mixing bowl, whisk together the butter, sugar, eggs, and vanilla extract. Set aside.

In a medium mixing bowl, combine the flour, salt, and cocoa powder. Transfer the dry ingredients from the other bowl and stir to combine. Fold in the chocolate chips.

Gently pour the brownie batter evenly into the baking pan.  Place the strawberries on top evenly spreading them.

Bake for 25 to 30 minutes or until a toothpick or knife comes out clean. Let the brownies cool for at least 15-20 minutes. Cut into squares and serve using a spatula. Enjoy!

Notes

*These brownies are extra fudgy and less cakey. If you prefer a cake-like brownie, use 3 large eggs.

No strawberries? No problem! I used raspberries and they were delicious, see photos above.
