Crispy on the outside and tender inside, this air fryer butternut squash recipe is quick, easy, and perfectly seasoned. A healthy side dish ready in under 20 minutes!
1 butternut squash, halved and seeds removed**
2 tablespoons unsalted butter, or olive oil
1 teaspoon ground nutmeg
2 tablespoons maple syrup
Salt and pepper to taste
Set aside the butternut squash halves with seeds removed.
In a small mixing bowl, mix the butter (or olive oil), nutmeg, and maple syrup. Brush the mixture onto the cut side of squash halves. Transfer the butternut squash halves, facing the cut side down, into the air fryer. Set the air fryer to 400 degrees (if you have the Instant Pot air fryer, set to air fry mode) and cook for 20 minutes. Turn over halfway through cooking time. Add a minute at a time if needed to achieve browning.
Brush with leftover mixture if desired. Serve each half for two for a bigger portion, or cut each in half to make 4 servings. Salt and pepper to taste.

*If you don't have an air fryer, you can roast the butternut squash halves on a baking sheet at 400 degrees Fahrenheit for up to one hour.
** For cubed squash, toss the cubes with the mixture in a larger mixing bowl and transfer to the air fryer in a single layer. Air fry at 400 degrees for 10-15 minutes or until browning.
