Ingredients

Units Scale

Arugula Burrata Salad

  • 3-4 medium peaches, quartered and pit removed
  • 2 balls (8 ounces) fresh burrata
  • 1/2 cup raw pecans, unsalted
  • 8 cups of arugula or other leafy greens

Honey Lemon Dressing

  • 1/4 cup extra virgin olive oil
  • Juice of a lemon
  • 2 cloves crushed garlic
  • 2 teaspoons pure honey
  • one sprig fresh thyme, stem removed (or 2 teaspoons dried thyme)
  • Salt and pepper to taste

Instructions

Heat a grill pan (or outdoor grill) on medium high.ย  Place quarted peaches flesh side down. Let grill for 3-5 minutes or until charring. Flip over and cook an additional few minutes until charring on both sides.

While the peaches are grilling, prepare the salad dressing. In a medium bowl, whisk together all of the ingredientsย  for the honey lemon dressing until fully combined. Set aside.

Plate some mixed greens and top with half a ball of burrata (or the whole serving if preferred). Place the peaches on the salad and top with the pecans. Drizzle the salad dressing (about 1/4 cup per plate).

Notes

If you don't have burrata, try it with creamy mozzarella! Besides peaches, other stone fruits, like plums and nectarines would also be delicious! Or try berries!
