This minted peas recipe is fresh and full of flavor with sweet peas, mint, and a simple lemon dressing. An easy side dish ready in minutes!

Ingredients

  • 1 lb peas, thawed if frozen
  • 1 shallot, peeled, thinly sliced
  • 2 garlic cloves, minced or grated
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1/2 cup feta cheese crumbles
  • 1/4 cup fresh mint leaves, chopped

Instructions

If using frozen peas, set aside to thaw completely. For fresh peas, blanch the peas by boiling in water for 2-3 minutes, then drain and transfer to an ice bath. Set aside in a medium bowl.

In a small bowl, whisk together the shallot, garlic, olive oil, and lemon juice. Set aside.

Transfer dressing to the bowl with the peas and mix to combine. Add the feta cheese and mint leaves and stir to combine. Salt and pepper to taste.

Notes

This recipe is gluten-free!

To make vegan, use non-dairy feta crumbles or omit the cheese.
