This French toast casserole with brioche recipe is excellent for those who are not morning people. By prepping this dish the night before, you can enjoy sipping a cup of coffee with your favorite company while it bakes! If you prefer a make-ahead breakfast meal for the week, this dish, French toast brioche, is also excellent for meal prepping!

How To Make Brioche French Toast:
This overnight recipe simply consists of making the egg mixture and soaking it with the brioche bread overnight. Talk about easy! Here are the steps below:
Whisk together eggs, milk, maple syrup, cinnamon, and vanilla extract in a medium bowl; set aside.
Place bread pieces evenly in the pan. Pour egg mixture over bread pieces, ensuring they are fully saturated.
Sprinkle the berries across the bread and egg mixture.
Cover and soak overnight (or at least a few hours) in the refrigerator.
Bake for 45 minutes (for a softer texture) to one hour or more for a firmer consistency.
Drizzle with maple syrup or top with fruit!
How to Store French Toast Casserole with Brioche Bread:
Once the casserole is fully cooled, store the leftovers in an airtight container for up to three days in the refrigerator, or freeze for up to three months.

Variations:
For a vegan version: Replace the eggs with a liquid vegan egg mixture or replacer, such as Just Eggs, and a non-dairy milk in place of the cow's milk. Also, check the labeling for the bread to make sure it is vegan.
To make Gluten-free, use gluten-free bread for the brioche bread.
