Ricotta on Toast with Honey and Roasted Cherries

Move over avocado! This ricotta on toast with honey and roasted cherries is the new breakfast staple!

Ricotta is the perfect well rounded ingredient to have in your refrigerator! Use it in sauces, pasta, and even use it in dessert! Just like other whole fat cheeses, use it in moderation. Ricotta has a high saturated fat content, but also is a good serving of protein.

So, does the good out “whey” the bad?

In a one cup serving, you get 28 grams of protein and over 50% of your daily value for calcium and selenium! However, you also get 20 grams of saturated fat. So, my advice? As I said earlier, in moderation is key.

Cherry ricotta toast two ways...

This recipe is for the sweet breakfast eaters! If you prefer a more savory approach, use a drizzle of balsamic vinegar instead of the honey (or both) and top with some fresh basil and salt to taste. Still delicious!!

Not a cherry fan? Try it with fresh raspberries, blueberries, or even roasted grapes!

While making this toast I came across my new favorite kitchen tool (besides the microplane I use daily)! Not sure why it took me so long to purchase a cherry pitter, but it really does make life easier I swear!

Ingredients

Scale

1 pound cherries, pitted and stems removed

¼ cup pure honey or maple syrup

¼ cup unsalted raw almonds, chopped

½ cup whole milk ricotta cheese

12 slices rustic bread

Salt to taste

Instructions

Preheat oven to 400 degrees Fahrenheit. Spread cherries on a baking sheet lined with parchment paper or other non-stick lining. Drizzle with one tablespoon honey or maple syrup. Bake in the oven for 10-15 minutes or until the cherries are softened. With 5 minutes remaining, add the almonds to the baking sheet to toast.

While the cherries are roasting, toast the bread (2 slices at a time) to your preference in a toaster or toaster oven. Once done, spread the ricotta cheese as you would with other spreads. Set aside.

Once the cherries and almonds are done, spoon cherries over the toast. Set aside the almonds to let cool. Chop the almonds then top on the toast. Drizzle remaining honey. Salt to taste. 

Notes

If you want to cut cooking time, use pre-roasted almonds for this dish.

Are you a savory eater? Try using some balsamic vinegar and fresh basil for toppings instead of the honey!

This recipe can easily be individualized to one. Just save the remaining cherries and ricotta toast in the refrigerator. The cherries can be stored for 3 days; ricotta cheese stored based on manufacturer's recommendation (usually 5 days after opening).
