A healthier take on overnight French toast using fresh blackberries! Soaking overnight makes this French toast casserole with brioche recipe super easy and convenient for your next brunch or weekday breakfast meal prep!
1 loaf of Brioche bread, torn into 1" cubes (about a 14-17 ounce loaf)
4 large eggs, whole
2 egg whites
2 cups low-fat milk, can be cow's milk or dairy alternative of your choice
1/4 cup pure maple syrup
3/4 to 1 teaspoon cinnamon, ground
1 teaspoon pure vanilla extract
12 ounces blackberries, thawed if frozen
Preheat oven to 350 degrees Fahrenheit. Set aside a 9 x 13 greased baking dish.
Whisk together eggs, milk, maple syrup, cinnamon, and vanilla extract in a medium bowl; set aside.
Place bread pieces evenly in the pan. Pour egg mixture over bread pieces, ensuring they are fully saturated.
Sprinkle the berries across the bread and egg mixture.
Cover and soak overnight (or at least a few hours) in the refrigerator.
Bake for 45 minutes (for a softer texture) to one hour or more for a firmer consistency.
Drizzle with maple syrup or top with fruit!
This recipe can easily be made with other berries for a tasty alternative to blackberries.
If you prefer vegan, use non-dairy alternatives such as soy, coconut, or almond milk.
For a gluten-free version, use a gluten-free bread for the brioche.
