- 1 pound of fresh or frozen cherries
- 4-6 Nectarines
- Maple Syrup
- Lemon Juice
- Flour
- Baking Powder
- Ground Cinnamon
- Sugar
- Vanilla Extract
- Milk
- Unsalted Butter
- Salt (optional)

How to Make It:
This nectarine cobbler recipe is done in a few easy steps! First, the fruits will be combined with lemon juice, maple syrup, and ground cinnamon in a medium mixing bowl and transferred to the baking dish to set aside.
Next, the remaining ingredients are whisked together in a large mixing bowl and poured over the fruit and the empty spaces in the dish. You can also drop the batter atop the fruit for an uneven rustic layer.
The cherry cobbler is then ready for baking! Bake for 40-50 minutes or until the top starts to brown. Serve it with your favorite ice cream or yogurt!
Variations:
To make this a vegan cobbler, substitute vegan butter and non-dairy milk for the butter and milk used in the batter.

How to make it a Gluten-Free Cobbler:
To make this a gluten-free cobbler, use a 1:1 ratio for substituting gluten-free flour for the all-purpose flour. I like the one called Measure for Measure by King Arthur.
Other ingredients to keep an eye on are vanilla extract and baking powder. Pure vanilla extract is gluten-free and baking powder is generally gluten-free. Double-check the labeling for baking powder which can sometimes have hidden ingredients.
How to Store it:
Store leftover cherry cobbler in an airtight container for up to 4 days in the refrigerator or 3 months in the freezer. Enjoy!

Ingredients
- 4-5 tablespoons unsalted butter, melted (see Notes)
- 1 lb cherries, pitted and halved
- 4-6 nectarines, sliced ¼”
- ¼ cup pure maple syrup
- 1 teaspoon lemon juice
- ½ teaspoon ground cinnamon
- 1 cup all-purpose or whole wheat flour (see Notes 2)
- 2 teaspoons baking powder
- ⅓ cup raw sugar
- 1 teaspoon pure vanilla extract
- 1 cup milk of your choice (preferably with a little fat)
Instructions
Preheat oven to 375 degrees Fahrenheit. Layer the 9" x 13" baking dish with the melted butter (or melt the butter in the baking dish while the oven is preheating).
Combine the cherries, nectarines, lemon juice, maple syrup, and cinnamon in a medium bowl. Stir until completely mixed. Pour into the baking dish and set aside.
Whisk the remaining ingredients in a large mixing bowl.
Pour the batter into the baking dish covering the fruit or filling in spaces in the dish.
Bake for 40 to 50 minutes uncovered or until the top starts browning.
Serve with your favorite ice cream or yogurt!
Notes
- Layer the pan with the melted butter or melt the butter in the 9 x 13 dish while the oven is preheating.
- To make this a gluten-free cobbler, use gluten-free flour for the all-purpose or wheat flour. Make sure the baking powder and vanilla extract are also certified gluten-free if gluten-sensitive due to the potential for gluten contamination where it is processed.
