Cherry and Nectarine Cobbler

Cherry cobbler with juicy nectarines makes this a fun twist on your traditional cobbler! This recipe can be easily modified for a gluten-free cobbler!

Ingredients

  • 4-5 tablespoons unsalted butter, melted (see Notes)
  • 1 lb cherries, pitted and halved
  • 4-6 nectarines, sliced 1/4โ€
  • 1/4 cup pure maple syrup
  • 1 teaspoon lemon juice
  • 1/2 teaspoon ground cinnamon
  • 1 cup all-purpose or whole wheat flour (see Notes 2)
  • 2 teaspoons baking powder
  • 1/3 cup raw sugar
  • 1 teaspoon pure vanilla extract
  • 1 cup milk of your choice (preferably with a little fat)

Instructions

Preheat oven to 375 degrees Fahrenheit. Layer the 9" x 13" baking dish with the melted butter (or melt the butter in the baking dish while the oven is preheating).
Combine the cherries, nectarines, lemon juice, maple syrup, and cinnamon in a medium bowl. Stir until completely mixed. Pour into the baking dish and set aside.
Whisk the remaining ingredients in a large mixing bowl.ย 
Pour the batter into the baking dish covering the fruit or filling in spaces in the dish.
Bake for 40 to 50 minutes uncovered or until the top starts browning.
Serve with your favorite ice cream or yogurt!

Notes

  1. Layer the pan with the melted butter or melt the butter in the 9 x 13 dish while the oven is preheating.
  2. To make this a gluten-free cobbler, use gluten-free flour for the all-purpose or wheat flour. Make sure the baking powder and vanilla extract are also certified gluten-free if gluten-sensitive due to the potential for gluten contamination where it is processed.
