Blood Orange Roasted Parsnips

Citrus season is here! Try this colorful recipe, Blood Orange Roasted Parsnips, for your next side dish to please everyone at the table!

 

With only 5 ingredients, this recipe couldn't be more simple! Serve as a delicious side dish or with your favorite protein as a healthy main entrée! Using fresh, whole ingredients, this dish is vegan and gluten-free!

Roasted parsnips with blood oranges make this vegan and gluten-free side dish a wonderful pairing to meat, fish, or vegetarian proteins.

 

Try a flavor boost!

Thanks to the amazing flavor and natural sweetness, the juice and zest of citrus reduces the need for table salt in a recipe! I promise with these blood oranges, tasting like sweet berries and citrus combined, you will not miss the absence of salt. In addition to roasting with vegetables, try citrus juice as a marinade for your favorite protein, or in a homemade sauce or salad dressing. Homemade dressings also help reduce the amount of salt intake in our diets. Like most of us Americans, we are exceeding the recommended intake of salt with almost a whopping 3,400 mg consumed on average (almost 1 ½ teaspoons of table salt). Most of this consumption comes from processed foods; another good reason to cook more at home with whole ingredients. Orange Roasted Parsnips Recipe...

Using blood oranges makes this recipe extremely versatile. If parsnips are not your favorite, definitely try them with other favorites, such as carrots and even asparagus. I used leftover fennel from my Easy Baked Shakshuka recipe to reduce food waste (and also realized the fennel made an excellent flavor addition.  Blood oranges may be harder to find at some stores, so navel oranges can also make a wonderful and delicious substitute. This side dish of orange roasted parsnips will pair well with heavy meat dishes, such as roasted chicken or beef, but can also be tasty with salmon. I made my meal vegetarian with meatless veggie sausage and some brown rice. However you choose, the colorful blood oranges are still the spotlight!

Blood Orange Roasted Parsnips

Simple side dish with only 5 ingredients! Roasted parsnips flavored with blood oranges, fennel, and rosemary will make your kitchen smell amazing.

Course Side Dish
Prep Time 10 minutes
Cook Time 35 minutes
Total Time 45 minutes

Ingredients

  • 4-5 whole Parsnips peeled & quartered lengthwise
  • 1 whole Fennel Bulb trimmed and chopped
  • 2 whole Blood Oranges sliced
  • 2 tablespoon Fresh Rosemary Leaves stem removed
  • 1-2 tablespoon Olive Oil extra virgin

Instructions

  1. Preheat oven to 400 degrees Farenheit.


  2. Place parsnips and fennel evenly in a shallow baking dish or baking sheet. Drizzle with olive oil. Spread orange slices and rosemary on top of the vegetables.  

  3. Bake for 35-40 minutes or until slightly browned. Serve as a side dish or with your favorite protein as a main entree!
