A lion's mane mushroom recipe using a vegan mushroom meat substitute is the perfect versatile addition to any meal!

What You'll Need For This Lion's Mane Mushroom Recipe:

Ingredients:

  • Lion's Mane Mushrooms (or king oyster and Portabella are also perfect)
  • Olive oil and butter
  • Garlic
  • Fresh herbs, such as thyme or tarragon
  • Soy sauce

Equipment:

  • Cutting board
  • Sharp chef's knife (I use one by Henckels)
  • Cast iron skillet or saute pan

How to Make it:

This recipe is quick and easy! First, saute the mushroom steaks in olive oil for a few minutes on each side. The goal is to get the mushrooms browning.

Next, you'll add the butter, garlic, soy sauce, and fresh herbs to cook for an additional minute. These ingredients will add flavor and juiciness to the mushrooms. The soy sauce adds an umami flavor, but is completely optional. This recipe can be as flavorful with simple butter, garlic, and fresh herbs!

Variations:

This lion's mane mushroom recipe is dairy-free and suitable for those with dairy allergies.

To make this Vegetarian: use unsalted butter (containing dairy)

To make this gluten-free: use tamari that is labeled gluten-free for the soy sauce.

Fresh herbs to try: thyme, tarragon, parsley, oregano, chives

Other Mushroom Varieties: King Trumpet Oyster (or other oyster variety), Portabella, Shiitake, Matsutake

These mushrooms, as a meat substitute, are so versatile! Add them to your favorite dish, such as pasta or salad! This recipe also works as a main and can be accompanied by a vegetable side or a grain dish!

Besides adding umami flavor to vegetarian dishes, mushrooms provide good sources of B vitamins, potassium, and selenium, to name a few!

Ingredients

Scale

2 tablespoons olive oil

1 to 2 lbs Lion's Mane mushrooms or King Oyster or Portabella, sliced into ¼" pieces (see Notes 1)

2 cloves garlic, minced

2 to 3 tablespoons unsalted butter (see Notes 2)

1 tablespoon fresh thyme leaves, chopped

1-2 tablespoons low-sodium soy sauce, optional (see Notes 3)

salt and pepper to taste

Instructions

Heat olive oil to medium-high in a large saute pan or cast iron skillet. Cook the mushrooms until softened and browning, about 3-5 minutes per side. Add the garlic, vegan butter, fresh herbs, and soy sauce. Let cook for a minute and spoon the liquid over the mushrooms to coat.  Turn off the heat and salt and pepper to taste. 

Add the mushrooms to your main entree, such as a pasta or salad, or serve with your favorite side dishes!

Notes

  1. To make this recipe vegan, use vegan butter or olive oil if desired. 
  2. For a gluten-free version, use tamari instead of soy sauce.
