A simple and unique side dish recipe using the air fryer! Air Fryer Cabbage Steaks are ready in under 20 minutes!

A fun twist for St Patrick's Day and as a spring side dish!
This was inspired by my other recipe on my blog and pairs well with this amazing side dish recipe. These are all also perfect for Easter and the spring season!

Ingredients
You'll find most of the ingredients for this air fryer cabbage in your pantry! For ideas on ingredient substitutions read more below!

- Caraway Seeds
- Dijon Mustard
- Cider Vinegar
- Paprika
- Cumin
- Dill
- Mayonnaise (optional)
- Salt and Pepper

Instructions
The main part of this recipe is the prepping! Making sure to cut the cabbage into wedges that hold together is key. Eating Well has an excellent article on cutting cabbage!
Coating the cabbage in the olive oil mixture evenly will also help the browning process in the air fryer.

Start by cutting the cabbage in half (from top to bottom). Then cut the cabbage into 1-2" wedges by cutting the cabbage head from the top down.

Place the cabbage steaks/wedges flat on a cutting board or baking sheet. Using a pastry brush or basting brush, spread the olive oil mixture onto the cabbage.
Hint: Make sure to get the mixture within the layers, you want the cabbage fully coated for more flavor. I love this silicone pastry brush for its bristle-free application!
The key to browning the cabbage is that it will need to be in a single layer within your air fryer. If you have the Air Fryer attachment for the Instant Pot (like me!), you will cook the cabbage in smaller batches.
Once the cabbage wedges are ready to your liking, carefully use a pair of tongs to transfer the wedges to a plate. They can be fragile when removed from the air fryer.

Substitutions
This air fryer cabbage recipe is vegetarian and gluten-free, but can also be made vegan. The ingredients in this recipe are pretty basic, but you can also play around with them!
- Vegan - Substitute vegan mayonnaise for the regular mayonnaise or use more Dijon mustard and olive oil
- Caraway Seeds- If you do not have these in your pantry, try fennel seeds or ½ teaspoon ground fennel which also pairs nicely with cabbage!
- Cider Vinegar- replace it with white wine, sherry, or balsamic vinegar
- Mayonnaise - For all of you mayonnaise haters out there (you know who you are!), substitute with more Dijon mustard and olive oil
Variations
Not a fan of cabbage? Try it with cauliflower, broccoli, or even kohlrabi. Green cabbage is the popular cabbage version, but delicious savoy and napa also work great!

Equipment
This recipe calls for the air fryer and also works with the air fryer attachment for the instant pot. Don't worry if you have neither of these, the oven also works with this recipe! You can roast the cabbage at 400 degrees Fahrenheit for a half hour, or you can try this tasty version for roasted cabbage steaks by Well Plated by Erin!
Storage
Store the cabbage steaks in an airtight container for up to five days. Or, freeze in an airtight container for up to three months.
Pairing
Pair the air fryer cabbage with your favorite protein and add a hearty grain or starch to make a nice balanced meal! For St. Patrick's Day, I know there will be lots of corned beef, but other proteins, such as chicken, salmon, and beans also go nicely.

Ingredients
1 medium cabbage (about 1-2lbs), cut into wedges (see note 1)
3 tablespoons extra virgin olive oil
2 teaspoons dijon mustard
1 tablespoon mayonnaise
1 tablespoon cider vinegar
2 cloves garlic, crushed
½ teaspoon caraway seeds
¼ teaspoon smoked paprika
¼ teaspoon ground cumin
Salt and pepper to taste
Optional Toppings: fresh herbs like dill, parsley or chives, red pepper flakes,
Instructions
Place the wedges cut side down on a cutting board. Set aside.
In a small mixing bowl, combine all of the remaining ingredients and whisk together until fully mixed. Using a pastry brush or silicone brush, coat the cabbage with the olive oil mixture. Gently flip the cabbage and brush the other side.
Place the cabbage cut side down in a single layer in the bottom of the air fryer basket. If you have a smaller basket, you will do multiple batches.
Turn the air fryer to Air Fry at 400 degrees Farenheit and cook for 10 minutes. The air fryer will beep halfway through to turn the food over, and can optional if you prefer a more golden side. Add additional time by 2 minute increments until the cabbage is cooked to your liking. Remove the cabbage with a pair of tongs and gently transfer to a plate or dish.
Top with additional toppings, such as the olive oil mixture, fresh herbs, or red pepper flakes. Salt and pepper to taste.
Notes
- Trim the stem and remove loose leaves. Cut the wedges into 1" pieces from top to bottom by keeping the stem attached. This will hold the cabbage piece into a wedge or steak.
