Simple Tomato Burrata Bruschetta

Want to fancy up your next snack or appetizer? This tomato burrata bruschetta, or bruschetta caprese (using burrata) is ready in under 20 minutes! Just in time for the Superbowl!

For this bruschetta caprese recipe, you only need basic ingredients, and is extremely versatile. While the bread bakes for up to 5 minutes, you'll work on the topping. In this post, I will share the ingredients, simple instructions, and some fun modifications! This recipe uses creamy burrata instead of the traditional mozzarella cheese!

What You'll Need

  • A French baguette bread, or another loaf such as Italian, Foccacia, Ciabatta, or even sourdough!
  • A spreadable cheese, such as Burrata, feta, goat, or brie.
  • Fresh tomatoes, basil, shallots, and garlic
  • Olive oil
  • Balsamic Vinegar
  • Baking sheet for the oven or toaster oven

How to Make it

This recipe is so simple! First, spread olive oil and garlic mixture on the bread. Then toast the bread and add toppings!

While the bread toasts for only 5 minutes just combine the tomatoes with the shallot and vinegar. Spread burrata on the toasted bread and top with the tomato mixture. Sprinkle with fresh basil leaves and you are ready to serve!

Variations

Burrata doesn't have to be the star of the show! Other soft cheeses can also make a great spread, such as feta, brie, goat cheese, or mozzarella.

Not a fan of tomatoes? Try some tasty alternatives, such as peaches, cucumbers, roasted eggplant, or even white beans! Fava beans and peaches pair nicely with burrata cheese.

For other toppings, try pesto, other fresh herbs, such as chives, even chili pepper flakes, or hot honey!

If you prefer a plant-based version, substitute the burrata for a vegan spread, like Treeline cheese.

For those of you who are gluten-sensitive, swap the French bread for your favorite gluten-free version. Against the Grain makes a gluten-free baguette!

So, to sum up everything. All you need is delicious bread, creamy cheese, and a few fresh ingredients! This recipe is versatile for all diet or food preferences. In less than 20 minutes you can have a fancy appetizer just in time for superbowl watching!

Ingredients

Scale

Loaf of French bread, about 12 ounces

¼ cup extra virgin olive oil

2 cloves garlic, minced

1 small shallot, peeled and diced

10 ounces grape tomatoes, diced (or 2 Roma tomatoes)

2 tablespoons balsamic vinegar

8 ounces burrata (about 2 balls of burrata)

Bunch of fresh basil leaves, sliced or chopped (about 1 cup)

Salt and pepper to taste

Instructions

Preheat oven to 400 degrees Fahrenheit. Set aside a parchment or foil-lined baking sheet.

Slice the French bread into ½ " slices and arrange evenly on the baking sheet. Set aside.

In a small bowl, combine the olive oil and garlic. Using a silicone or pastry brush, spread the olive oil mixture onto each slice and return to the baking sheet. Bake in the oven for 4-5 minutes or until browning.

While the slices toast, in a medium bowl, combine the tomato, shallot, and balsamic vinegar . Salt and pepper to taste then set aside.

Once the bread is ready, spread the burrata onto each slice. Top with the tomato mixture and fresh basil leaves.

Notes

Don't have burrata? A delicious feta or goat cheese would also be perfect!

Want a vegan version? Substitute your favorite vegan spread for the burrata! I am a big fan of the Treeline Cheese brand!
