Simple Tomato Burrata Bruschetta

Want to fancy up your next snack or appetizer? This tomato burrata bruschetta is ready in under 20 minutes! Just in time for the Superbowl!



Loaf of French bread, about 12 ounces

1/4 cup extra virgin olive oil

2 cloves garlic, minced

1 small shallot, peeled and diced

10 ounces grape tomatoes, diced (or 2 Roma tomatoes)

2 tablespoons balsamic vinegar

8 ounces burrata (about 2 balls of burrata)

Bunch of fresh basil leaves, sliced or chopped (about 1 cup)

Salt and pepper to taste


Preheat oven to 400 degrees Fahrenheit. Set aside a parchment or foil-lined baking sheet.

Slice the French bread into 1/2 " slices and arrange evenly on the baking sheet. Set aside.

In a small bowl, combine the olive oil and garlic. Using a silicone or pastry brush, spread the olive oil mixture onto each slice and return to the baking sheet. Bake in the oven for 4-5 minutes or until browning.

While the slices toast, in a medium bowl, combine the tomato, shallot, and balsamic vinegar . Salt and pepper to taste then set aside.

Once the bread is ready, spread the burrata onto each slice. Top with the tomato mixture and fresh basil leaves.
