This recipe takes only 10 minutes to prep! Place it in the freezer and voila! No baking needed! This is a fun treat for all ages and can be modified based on your food preferences. Keep in mind, parchment or wax paper is a must for this recipe.
2 cups unsweetened yogurt of your choice*
1/2 teaspoon pure vanilla extract
2 teaspoons pure maple syrup
Zest and juice of one orange (I used a blood orange)
1/4 cup dried cherries, unsweetened
1/4 cup sliced almonds, unsalted
1/4 cup semi-sweet chocolate chips
1 teaspoon beet juice powder, optional (to add more color)
Line a baking sheet with parchment paper and set aside.
In a large mixing bowl, combine the yogurt, vanilla extract, maple syrup, orange juice and zest. Mix well to combine all ingredients.
Pour the yogurt mixture slowly onto the baking sheet and spread evenly. Sprinkle the remaining ingredients on top of the mixture.
Gently place another sheet of parchment paper and lay flat on top of the mixture. Place in the freezer for at least one hour or until its solid all through out. Can also be frozen overnight.
This recipe can be made vegan using dairy-free yogurt (I tried a version with Forager Cashewmilk yogurt and it was delicious!), and dairy-free chocolate chips. Other fun toppings to try: coconut flakes, fresh fruit, white chocolate, and even drizzled with melted nut butter!
Also, make sure to eat this in under 20 minutes or the melted bark can get messy!
* I used a delicious plantbased version from Forager Project
