A healthier take on overnight french toast using fresh blackberries! Soaking overnight makes this recipe super easy and convenient for your next brunch or weekday breakfast meal prep!
1 12 ounce loaf of french bread, cubed or torn into 1 " pieces (brioche would also work great)
4 large eggs, whole
2 egg whites
2 cups low fat milk, can be cow's milk or dairy alternative of your choice
1/4 cup pure maple syrup
3/4 to 1 teaspoon cinnamon, ground
1 teaspoon pure vanilla extract
12 ounces blackberries, thawed if frozen
Set aside a greased 9 x 13" pan.
In a medium bowl, whisk together eggs, milk, maple syrup, cinnamon, and vanilla extract; set aside.
Place bread pieces evenly in the pan. Pour egg mixture over bread pieces ensuring they are fully saturated.
Sprinkle in the berries across the bread and egg mixture.
Cover and soak overnight (or at least a few hours) in the refrigerator.
Bake at 350 degrees Fahrenheit for 45 minutes (for a softer texture) to one hour or more for a firmer consistency.
Drizzle with maple syrup or top with fruit!
This recipe can easily be made with other berries for a tasty alternative to blackberries. If you prefer other milk sources than cow's milk, non-dairy alternatives such as soy, coconut, or almond would also work great!
