Instead of starting out with a normal introduction about food or other nutrition topics, I wanted to share with you what is on my mind (and I am sure most of you as well). I know that right now is a very weird and scary time for all of us. First and foremost, thank you to all of the food industry and healthcare workers out there providing for all of us. Many of you are risking your lives every day during this pandemic. As grocers, thank you for providing all of us the food and toiletries we need to survive, and yes lots of baking supplies! For emergency personel and medical workers, thank you for treating and saving those that need your urgent care. Please remember that we are stronger together as we unite to fight this pandemic. Even by staying home and social distancing you are fighting. So please be safe, continue washing your hands to Happy Birthday or the ABC's, and know that this will get better.
With spring's arrival, let it be a reminder that a new start is coming. I am reminded of this as I proudly watch my daffodils and tulips bloom outside (I planted bulbs for the first time last fall!). Also, with spring comes lots of delicious produce! One of my favorites has always been asparagus. The plant is gorgeous, the taste is amazing, and it looks beautiful in any dish. They are also delicious in pasta dishes, on their own as a side dish, in a bountiful salad, or, see below, as asparagus fries!
This recipe for asparagus fries is perfect for the whole family. Who doesn't want some comfort food right now? So, instead of delicious potatoey french fries, I coated asparagus spears with bread crumbs and seasoning and tossed them in the oven. No deep frying needed for the perfect crunchiness here! I then paired these asparagus fries with a creamy dill sauce. Dill is perfect this time of year and makes a perfect pairing.

These asparagus fries are a tasty alternative to potato fries, here paired with a creamy yogurt dill sauce. A new family favorite!
Ingredients
1 pound asparagus spears, trimmed
2 large eggs, beaten
¼ cup all purpose flour
1 ½ to 2 cups panko crumbs
1 tablespoon garlic powder
1 tablespoon italian seasoning blend
6 ounces plain greek yogurt, whole fat
⅓ cup sour cream
2 tablespoons fresh dill, chopped finely
1 teaspoon onion powder
1 teaspoon garlic powder (can use 2 cloves fresh garlic minced)
1 teaspoon lemon juice
Salt and pepper to taste
Instructions
Preheat oven to 425 degrees Farenheit. Set aside a cookie sheet lined with parchment paper.
Place flour, eggs, and panko crumbs each in a separate shallow bowl. Dip each asparagus spear first in the flour (shake off excess flour), then dip and coat in the egg mixture (allowing excess to drip off) and lastly coat with breadcrumbs. Again, make sure to shake off excess bread crumbs. Gently place on the cookie sheet leaving room for each asparagus spear.
Transfer the cookie sheet to the oven and bake for 12 to 15 minutes or until browning occurs.
While the asparagus is cooking, in a large mixing bowl combine all of the remaining ingredients for the dill sauce. Mix thoroughly. Transfer to small individual bowls for dipping or place on a plate with your asparagus fries.
Notes
If you prefer a gluten-free version, feel free to substitute with gluten free flour and bread crumbs. Almond flour or chickpea flour would make a great alternative.
