This delicious vegan avocado pasta salad uses heart-healthy avocado in place of mayo!
Ingredients

8ounces macaroni pasta, uncooked
2 celery stalks (about 1 cup), finely chopped
2 large carrots, peeled and finely chopped
1cup green peas, thawed if frozen
1 scallion, sliced
1/4cup fresh dill, chopped
2 cloves garlic, peeled
1 small shallot, peeled and largely chopped
1 medium avocado, peeled
1 tablespoon lemon juice
Instructions
In a large pot, bring salted water to boiling. Add the pasta and cook until al dente (or according to package instructions). Remove from heat, drain, and set aside.
Combine in a food processor, the garlic, shallot, avocado, and lemon juice. Set aside.
Stir together the pasta, avocado mixture, vegetables, and dill in a large mixing bowl.
