Simple Pumpkin Maple Pecan Granola

This pumpkin maple pecan granola is super quick, nutritious, and simply delicious! Try this new fall favorite for breakfast or as a snack! It is gluten-free and easily can be made vegan!

Ingredients

2 cups rolled oats

1/2 cup quinoa, uncooked

1 cup unsalted pecans, chopped

1/2 cup dates, pitted and chopped

3 tablespoons pure maple syrup

3 tablespoons butter, melted

2 teaspoons pumpkin pie spice

Instructions

Preheat oven to 350 degrees Fahrenheit.  Set aside a parchment-lined, rimmed baking sheet. In a large mixing bowl, combine all of the ingredients. Pour onto the baking sheet. Bake for 20-25 minutes until browning occurs.

Notes

  • If vegan, substitute coconut oil for the butter. If highly sensitive to gluten, please make sure to get oats that are certified gluten-free.
