Chocolate Chip Pumpkin Banana Muffins

A delicious combination of pumpkin and banana with wholesome ingredients makes it the perfect muffin!

Ingredients

  • 1/3 cup coconut oil (can also use butter or olive oil)
  • 1/2 cup date butter
  • 2 eggs
  • 1 cup pumpkin puree
  • 2 bananas, mashed
  • 1/4 cup milk of your choice
  • 1 teaspoon baking soda
  • 1 teaspoon pure vanilla extract
  • a pinch of salt
  • 1 1/2 teaspoon pie spice
  • 1 1/2 cups whole wheat flour
  • 1/4 cup flaxseed, ground
  • 1/4 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350 degrees. Have a greased or non-stick 12 count muffin pan set aside.
  2. In a large mixing bowl, combine oil, date butter, and eggs until well blended. Then add the pumpkin, bananas, and milk; whisk until smooth.
  3. Next add the baking soda, vanilla extract, spice blend, and salt.
  4. Slowly mix in the flour and flaxseed.
  5. Optional, mix in dried fruit or nuts; I added in 1/4 cup chocolate chips.
  6. Bake for 20-25 minutes. Test with a knife to make sure batter does not stick.
  7. Let the muffins cool before serving. Enjoy!!
