Air Fryer Cabbage

Air fryer cabbage with fresh garlic, dijon mustard, and caraway seeds will be your new favorite side dish this spring!

Ingredients

1 medium cabbage (about 1-2lbs), cut into wedges (see note 1)

3 tablespoons extra virgin olive oil

2 teaspoons dijon mustard

1 tablespoon mayonnaise

1 tablespoon cider vinegar

2 cloves garlic, crushed

1/2 teaspoon caraway seeds

1/4 teaspoon smoked paprika

1/4 teaspoon ground cumin

Salt and pepper to taste

Optional Toppings: fresh herbs like dill, parsley or chives, red pepper flakes,

Instructions

Place the wedges cut side down on a cutting board. Set aside.

In a small mixing bowl,  combine all of the remaining ingredients and whisk together until fully mixed. Using a pastry brush or silicone brush, coat the cabbage with the olive oil mixture. Gently flip the cabbage and brush the other side.

Place the cabbage cut side down in a single layer in the bottom of the air fryer basket.  If you have a smaller basket, you will do multiple batches.

Turn the air fryer to Air Fry at 400 degrees Farenheit and cook for 10 minutes. The air fryer will beep halfway through to turn the food over, and can optional if you prefer a more golden side. Add additional time by 2 minute increments until the cabbage is cooked to your liking. Remove the cabbage with a pair of tongs and gently transfer to a plate or dish.

Top with additional toppings, such as the olive oil mixture, fresh herbs, or red pepper flakes. Salt and pepper to taste.

Notes

  • Trim the stem and remove loose leaves. Cut the wedges into 1" pieces from top to bottom by keeping the stem attached. This will hold the cabbage piece into a wedge or steak.
